The Problem
The pub chain struggled with rising operating costs, inconsitent execution and a lackluster menu, and needed higher quality menu items with more selection, simplified operations, reduced wastage and decreased labour.
The Solution
LKN worked with a large pub chain to develop a consistent pub classics food offering that could be scaled across multiple sites. Collaborating closely with management, chefs, and tenants, we ensured the menu was not only delicious and attractive but also profitable and simple to operate. We tested the new menus in a variety of pub settings, refining and iterating to create a versatile range of options suitable for the entire estate.
We were tasked with transforming the food offering for the pub chain, which was facing rising operational costs and inconsistent food delivery across multiple sites. The goal was to create a scalable, easy-to-execute menu that would elevate food quality, ensure consistency, and drive higher sales and profitability.
To tackle these challenges, we developed a pub classics menu that blended familiarity with excitement. The focus was on dishes that were crowd-pleasers but also simple to prepare and maintain across multiple locations. We introduced hearty favorites like steak pies, fish & chips, and roasts. By utilising common ingredients across dishes, kitchens were able to streamline operations, reduce food waste, and maintain consistency across all sites.
Throughout the process, we worked closely with management, chefs, and tenants to tailor the menu to each site’s specific needs. Extensive trials were conducted across different pub types, allowing us to refine the offerings based on customer and staff feedback. This iterative approach helped us create a range of menus that could be adapted to different operational styles.
One of the standout benefits of this approach was the reduction in food costs. By cross-utilising ingredients, we lowered the cost of goods sold by 20-30%, while still delivering a premium feel. Additionally, the streamlined kitchen operations reduced the need for staff during peak hours, helping to lower labor costs—a key concern for pub operators.
Beyond profitability, we focused on improving the customer experience. The new pub classics menu was designed to increase customer dwell time and encourage repeat visits. With a visually appealing menu featuring enticing food photography, the offering captivated and converted customers.
